I'm home now from the weekend and have started "meal planning" for the week.

Crock pot - Pork Roast with Apples & Sweet Potatoes

Chicken - Chicken Fajitas w/homemade tortillas & Refried Beans

I will probably half this recipe - 2 cups of beans is alot. They say you can freeze the leftovers but I've never tried it.

Fish - Grilled Garlic Dijon Herb Salmon, Roasted Cauliflower & Salad

Going to modify the cauliflower recipe a little, just one head of cauliflower & cut down on the cheese.
On Friday we will be hitting the road again to Waynesville, NC. Doing the Blue Ridge Breakaway metric century ride on Saturday.
