Southwestern Stuffed Peppers

Wanted to share this yummy recipe that Macie and I made last night.

Southwestern Stuffed Peppers

1/2 lb lean ground beef (we used grass-fed)
1 cup chopped onions
1 heaping Tbl. taco seasoning (we made homemade)
2 cups of cooked brown rice
3-4 bell peppers, halved & seeds removed (we used red & yellow)
1 can black beans, drained & rinsed
1/2 cup frozen corn
1 jar (15-16oz) of salsa
Shredded cheese

Pre-heat oven to 400 degrees.  Lightly coat peppers with olive oil and roast in baking dish for 20-25 minutes.  Remove & allow to cool.

Cook ground beef & sauté onions while peppers roast.

Mix all ingredients together in a large bowl (except the cheese) and spoon the mixture into each pepper half and cook for another 15-20 minutes.  Top with cheese and put back in oven until it melts.
